Maunika Gowardhan’s Pistachio and Cardamom cake


For Oscars night, we protested the lack of diversity by cracking open Maunika Gowardhan’s brilliant ‘Indian Kitchen’ for her pistachio and cardamom cake recipe. We showered rose petals on it with auspicious hopes for Sharmeen Obaid (‘Girl in a River: The Price of Forgiveness’) and Asif Kapadia (‘Amy’) wins in the Best Documentary categories (and because the recipe tells you to). It’s a genius combination of ground almonds, yoghurt, pistachio, cardamom, rosewater – which makes for a gloriously fragrant, heady, halwa-ey result.

As for the Oscars, Sharmeen took home her second, and Asif his first. The two of us had inhaled half the cake by the time Priyanka Chopra – resplendent in risqué Zuhair Murad – came out to present Best Editing. So really, we were all winners.
